A side dish in honor of Ms. Parks
Twice-Baked Eggplant
Curry: Cumin, Basil, Sumak
1 Med. Eggplant
1/2 C. Red Bell Pepper, Diced
1/4 C. Spinach, Chiffonaded
1 Tbsp. Sun Dried Tomato, minced
1/2 C. Feta Cheese, crumbled
1 1/2 tsp. Lemon juice
Preheat oven: 375 deg.
Spray olive oil in bottom of pan, dust generously with the curry. Cut eggplant in half, lengthwise, place face down in pan. Bake until insides can be scraped out.
Remove from oven, gently scrape out eggplant insides into medium bowl. Set skins aside. Puree eggplant insides, mix together with the remaining ingredients (only use 3/4 of the feta and red pepper). Scoop back into skins, sprinkle with remaining feta and pepper. Bake for another 20 minutes, or until topping starts to brown.
Can be done with Japanese eggplants for smaller side portions.
